Ingredients

400-500g boneless chicken, chopped

1 onion, chopped

1 apple, skin on, chopped

1 400g can chopped tomatoes

2 tbsp tomato sauce or chutney

2 tbsp tomato paste

1 1/2 tbsp curry powder

1 can chick peas
-
1 1/2 cups long grain rice

200ml or 2/3 cup coconut milk or cream
400ml or 1 &2/3cups water
1/2 tsp salt

Directions
In a frying pan or saucepan combine chicken, onion, apple tomatoes, sauce, paste and curry powder. Cover and cook over a medium heat, stirring occasionally ‘til chicken is cooked.
Remove lid, add chick peas, season with salt and pepper and simmer uncovered until sauce is reduced.
Rice - In a medium saucepan combine coconut cream, water and salt. Bring to the boil, add rice, stir, cover, and reduce heat to low. Cook 15 minutes, then remove from heat and keep covered until rice is tender and liquid absorbed-around another 10 minutes. Fluff with a fork.
Serve curry with cooked rice, or use to fill wraps, try with a salad, or stuffed into a jacket potato.
